HAVE to share this recipe with you! Gosh it was sooooo scrummy!! I had some Lamb left over from my Sunday Roast and didnt know what to do with it so I made a Spanish Hotpot! It was lush and my boyfriend and I absolutely loved it!! Sooo anyways...... here is the recipe, let me know if u try it! xxxxxxxxx

Prep Time: 20mins
Cooking Time: 30mins
Total Time: 50mins
Ingredients
- 1 onion
- 1 red pepper
- 5 sprigs of thyme
- 500g diced lamb (or pork if you prefer)
- ½ pack of chorizo slices
- 1 small jar olives
- 250g new potatoes
- 1 clove of garlic
- 1 tin of chopped tomatoes
Method
- Fry lamb in a pan, until cooked.
- Parboil new potatoes for 20 minutes
- Add garlic, onion and peppers to the pan and fry until soft.
- Add the chopped chorizo slices and olives to the pan.
- Add tin of tomatoes, half a cup of water, the potatoes and 5 sprigs of thyme and leave to simmer.
- Cover and leave on the heat for 30 minutes.
