Last nights dinner.... mmmmmmm

HAVE to share this recipe with you! Gosh it was sooooo scrummy!! I had some Lamb left over from my Sunday Roast and didnt know what to do with it so I made a Spanish Hotpot! It was lush and my boyfriend and I absolutely loved it!! Sooo anyways...... here is the recipe, let me know if u try it! xxxxxxxxx

Serves: 4
Prep Time: 20mins
Cooking Time: 30mins
Total Time: 50mins
   Ingredients
  • 1 onion
  • 1 red pepper
  • 5 sprigs of thyme
  • 500g diced lamb (or pork if you prefer)
  • ½ pack of chorizo slices
  • 1 small jar olives
  • 250g new potatoes
  • 1 clove of garlic
  • 1 tin of chopped tomatoes
Method
  1. Fry lamb in a pan, until cooked.
  2. Parboil new potatoes for 20 minutes
  3. Add garlic, onion and peppers to the pan and fry until soft.
  4. Add the chopped chorizo slices and olives to the pan.
  5. Add tin of tomatoes, half a cup of water, the potatoes and 5 sprigs of thyme and leave to simmer.
  6. Cover and leave on the heat for 30 minutes.
